Currently July (almost)

I'm so happy to link up with Farley again at Oh' Boy Fourth Grade for another Currently!
 So here it is...
 
 
 
Listening: If your not a fan of Late Night with Jimmy Fallon this probably really confused you!  I can't really explain why Jimmy Fallon dressed in a chicken costume clucking along to "Some Nights" is hysterically funny to me...but you can view it HERE and see what you think!
 
Loving: Chicago welcomed home the Stanley Cup yesterday and the city looked like an ocean of red and black! This girl did not make it downtown to the parade...too crazy and too sweaty.  BUT I am loving all of the Blackhawk Pride!
 
Thinking: 4th of July is coming and that means sparklers and fireworks! I think no matter what age you are, these are always fun.   :)
 
Wanting: Cannoli Dip = YUM-O! The recipe is super easy and is a crowd pleaser...the problem is that sometimes I don't wait for the crowd to get here before diving in!
Here is the simple recipe below:
 8oz. mascarpone cheese, 1/2 ricotta cheese, 1 1/2 cups powdered sugar, 1 tb vanilla, 1 cup chocolate chips & chopped pistachios (if desired) Serve it in a bowl with broken Waffle Cones as your dippers.
 
Needing: Pretty self explanatory...but hey, it's summer!
 
Tips, tricks, or hints: Even though we're teachers and our minds really never stop thinking about school; it's important to take a little "ME" time now and then to help re-charge!

  1. Hi Erin! Super cute blog! I'm also really excited for the 4th! The city I live in has banned fireworks for the past 23 years. When I saw the firework stand today I had to do a double take. We are definitely going to be buying some! Enjoy your 4th!

  3. I'd rather not think about fireworks. In my neighborhood, they shoot them off as soon as they can buy them. The neighbors behind me LOVE them. I get a free show every 4th of July and New Years. They must spend $1000 or more on them.

    The cannoli dip sounds delicious! Have fun wherever you are serving it!

  6. Congrats on the Stanley Cup! I was rootin' for y'all! I am a Lightning fan and well, we didn't do too well this year. So, props for coming back in the last three mins! Giiirrrllll! It is summer! Eat that cannoli dip! It sounds delish! The way I see it.. during the school year, I am on a consistent schedule.. that is the time to eat uber right and strict. Summer is supposed to be a little carefree!

    Off to go write the recipe down!

  7. So fun in Chicago right now, isn't it!?!?!?! Blackhawk's stuff everywhere. I didn't go downtown either, but watched some of it on TV...gave me goosebumps. My family went to the White Sox game today. It was so fun! My girls got to run the bases after the game. Quite memorable.
    Enjoy summer! That's my plan!
